Tomato & Cucumber Chickpea Salad

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 cup canned chickpeas, rinsed and drained
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp oregano
  • Salt & pepper to taste

Instructions:

  1. In a bowl, combine tomatoes, cucumber, and chickpeas.
  2. Drizzle with lemon juice and olive oil.
  3. Season with oregano, salt, and pepper.
  4. Toss well and let sit for 10 minutes before serving.
