Ingredients:
- 2 large carrots, sliced
- 1 medium zucchini, sliced
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
- 1 tbsp chopped fresh parsley (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Toss carrots and zucchini with olive oil, garlic powder, paprika, salt, and pepper.
- Spread on a baking sheet and roast for 20-25 minutes, stirring halfway.
- Garnish with fresh parsley and serve.
