Roasted Carrot & Zucchini Medley

Ingredients:

  • 2 large carrots, sliced
  • 1 medium zucchini, sliced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 1 tbsp chopped fresh parsley (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots and zucchini with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway.
  4. Garnish with fresh parsley and serve.
