Pumpkin Pie with Nut Crust

Crust Ingredients

  • 1 cup almonds or walnuts, ground
  • 1/2 cup oats, ground
  • 1 tbsp maple syrup or honey
  • 1 tbsp coconut oil, melted

Filling Ingredients

  • 1 cup canned pumpkin puree (unsweetened)
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup or honey
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 2 large eggs

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, mix ground nuts, ground oats, maple syrup, and coconut oil. Press the mixture into a pie pan to form the crust.
  2. Prepare the Filling: In a separate bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, cinnamon, nutmeg, ginger, salt, and eggs until smooth.
  3. Pour the filling into the crust and bake for 40-45 minutes, until the center is set.
  4. Let cool before slicing and serving.
