Crust Ingredients
- 1 cup almonds or walnuts, ground
- 1/2 cup oats, ground
- 1 tbsp maple syrup or honey
- 1 tbsp coconut oil, melted
Filling Ingredients
- 1 cup canned pumpkin puree (unsweetened)
- 1/2 cup Greek yogurt
- 1/4 cup maple syrup or honey
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp salt
- 2 large eggs
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C). In a bowl, mix ground nuts, ground oats, maple syrup, and coconut oil. Press the mixture into a pie pan to form the crust.
- Prepare the Filling: In a separate bowl, whisk together pumpkin puree, Greek yogurt, maple syrup, cinnamon, nutmeg, ginger, salt, and eggs until smooth.
- Pour the filling into the crust and bake for 40-45 minutes, until the center is set.
- Let cool before slicing and serving.
