Pecan Snowball Cookies

Welcome to thee final day of our five days of Christmas cookies

Ingredients:

  • 1 cup almond flour
  • 1/2 cup finely chopped pecans
  • 1/4 cup powdered erythritol
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup butter or coconut oil, softened

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Mix almond flour, pecans, erythritol, and salt in a bowl.
  3. Add softened butter and vanilla extract; mix until dough forms.
  4. Shape into balls and bake for 10-12 minutes. Let cool and dust with additional powdered erythritol.
