Welcome to day 2 of our five days of Christmas/Holiday Cookies

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered erythritol
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut oil, melted

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients in one bowl and wet ingredients in another. Combine.
  3. Roll dough into balls, flatten slightly, and place on a baking sheet.
  4. Bake for 10-12 minutes or until edges are golden. Cool completely.
