Welcome to day 2 of our five days of Christmas/Holiday Cookies
Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup powdered erythritol
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1/2 tsp vanilla extract
- 1/4 cup coconut oil, melted
Instructions:
- Preheat the oven to 350°F (175°C).
- Mix dry ingredients in one bowl and wet ingredients in another. Combine.
- Roll dough into balls, flatten slightly, and place on a baking sheet.
- Bake for 10-12 minutes or until edges are golden. Cool completely.
