Coconut Macaroons

Ingredients:

  • 2 cups unsweetened shredded coconut
  • 1/4 cup coconut flour
  • 1/3 cup powdered monk fruit sweetener
  • 1/4 tsp salt
  • 3 egg whites
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine all ingredients until a sticky dough forms.
  3. Scoop small mounds onto a parchment-lined baking sheet.
  4. Bake for 15-18 minutes or until golden.
