Chocolate Peppermint Cookies

Welcome to day 3 of the five day Christmas cookie recipes.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup powdered erythritol or 1/2 to 3/4 tsp pure monk fruit extract
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 egg
  • 2 tbsp coconut oil, melted
  • 1/2 tsp peppermint extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Combine dry ingredients in a bowl. Add wet ingredients and mix until dough forms.
  3. Roll into small balls, flatten slightly, and bake for 8-10 minutes.
  4. Let cool completely before serving.
