Welcome to day 3 of the five day Christmas cookie recipes.
Ingredients:
- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/3 cup powdered erythritol or 1/2 to 3/4 tsp pure monk fruit extract
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 egg
- 2 tbsp coconut oil, melted
- 1/2 tsp peppermint extract
Instructions:
- Preheat the oven to 350°F (175°C).
- Combine dry ingredients in a bowl. Add wet ingredients and mix until dough forms.
- Roll into small balls, flatten slightly, and bake for 8-10 minutes.
- Let cool completely before serving.
