Cauliflower Mashed “Potatoes”

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 cloves garlic, minced
  • ¼ cup Greek yogurt
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. Steam or boil the cauliflower until tender, about 10 minutes. Drain well.
  2. In a food processor, blend the cauliflower, garlic, Greek yogurt, and olive oil until smooth. Season with salt and pepper.
  3. Garnish with fresh chives if desired.
