Welcome to our five days of Christmas cookies starting with our Almond Flour gingerbread cookie.
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or monk fruit sweetener
- 1/2 tsp baking soda
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup unsweetened applesauce
- 2 tbsp coconut oil, melted
- 1 egg
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 325°F (160°C).
- Mix dry ingredients in a bowl.
- Combine wet ingredients separately, then mix into the dry ingredients until dough forms.
- Roll out dough between parchment paper and cut into shapes.
- Bake for 12-15 minutes. Cool before serving.
