Almond Flour Gingerbread Cookies

Welcome to our five days of Christmas cookies starting with our Almond Flour gingerbread cookie.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or monk fruit sweetener
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup unsweetened applesauce
  • 2 tbsp coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients separately, then mix into the dry ingredients until dough forms.
  4. Roll out dough between parchment paper and cut into shapes.
  5. Bake for 12-15 minutes. Cool before serving.
